- Butter: Rich and creamy unsalted butter brings a velvety texture and enhances the natural sweetness in this s’more bar recipe, ensuring every bar is irresistible and flavorful. To quote Paula Dean, “Butter, y’all. It makes everything better.”
- Graham Crackers: You can’t have this campfire treat without this sweet base.
- Brown Sugar: We love the molasses flavor and the chewy texture of brown sugar.
- Eggs: Provide moisture and richness, and help bind the dough.
- Vanilla Extract: Adds extra depth of flavor.
- Chocolate Chips: You can use the chips, Hershey bars, or cut a bar for rustic chunks.
- Marshmallows: We prefer the minis, but you can use any size!
- Cream Cheese: Adds a luxuriousness to the filling & topping.
- Salt: Enhances the other flavors.
- Confectioners’ Sugar: Makes the frosting smooth, sweet, & decadent!
- Golden Grahams Cereal: The PERFECT crunch factor & secret ingredient!
With just a few simple steps, minimal prep, and no campfire required, you’ll have an Instagrammable-worthy Summer treat in no time. So grab your marshmallows and a sweet tea and let’s do this!
Step One: First things first. Preheat the oven to 350 degrees F. Run and grab all your ingredients. Line your baking dish with parchment paper, leaving a bit of overhang.

These ooey-gooey s’mores bars begin with crunchy graham crackers. These go into the food processor and become graham cracker crumbs.
Step Two: In a large bowl, combine the flour mixture and add to the wet ingredients. Mix on medium speed until the graham cookie dough comes together.

Step Three: To the bowl of a stand mixer, fitted with a paddle attachment, cream room temperature butter and brown sugar, and add the eggs and vanilla extract.

Step Four: Press an even layer into a parchment paper-lined baking pan. This forms the delicious base layer for this easy summer dessert.

Step Five – Step Seven: Let’s make the chocolatey, rich filling! Combine the cream cheese, butter, milk chocolate, and the rest of the filling ingredients and spread on top of the graham cracker crust. Bake until a knife comes out clean.

Step Eight: Immediately top with mini marshmallows and bake until golden brown. We want them golden and to look like they have been “kissed” by a campfire!

Step Nine: While the marshmallows are getting sexy, combine the fudgy, chocolatey frosting top layer in a saucepan.

Step Ten: Once the marshmallows are golden, top with this DECADENT, rich frosting. Lastly, take a knife and swirl the melty marshmallows and the frosting. Top with the Golden Graham cereal. Place in the refrigerator for about an hour.
