- GRAHAM CRACKER COOKIE LAYER:
- 1 cup butter, softened to room temperature
- 1 1/2 cups packed light or dark brown sugar
- 2 large egg, at room temperature
- 2 teaspoon pure vanilla extract
- 2 cups all-purpose flour (spooned & leveled)
- 2 cups graham cracker crumbs (about 16 full-sheet graham crackers)
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- FILLING LAYER
- 2 (8-oz.) pkg. cream cheese, softened, reserving 4 oz. for frosting
- 1/2 cup butter, softened
- 1 cup sugar
- 4 tablespoons All Purpose or Unbleached Flour
- 1teaspoon vanilla
- 2 eggs
- 2 cups semisweet chocolate chips
- FROSTING
- 1/2 cup butter
- 1/2 cup milk
- 2 oz. chocolate, (chocolate chips, bars, or baking chocolate.)
- Reserved cream cheese
- 6 cups powdered sugar
- 2 teaspoon vanilla
- 4 cups marshmellows
Instructions
- Preheat oven to 350°F. Line an 11 inch baking pan with parchment paper, leaving enough overhang on the sides to easily remove the bars when they have cooled. Set aside.
- In a large bowl using stand mixer fitted with a paddle attachment, cream the butter and brown sugar together on medium-high speed, about 2 minutes. Add the eggs and vanilla extract and beat until combined scraping down the sides of the bowl as you mix.
- Mix the flour, graham cracker crumbs, baking powder, and salt together in a medium bowl. Add the mixture to the wet ingredients and beat on medium speed until combined.
- Press the graham cookie dough into prepared pan. Make sure it's even and not raised on the corners. Set aside.
- In small bowl, combine 12 oz. of the cream cheese, 1/2 cup butter, 1 cup sugar 4 tablespoons flour, 1 teaspoon vanilla and 2 eggs; beat 1 minute at medium speed until smooth and fluffy. Spread over the graham cookie mixture; sprinkle evenly with chocolate chips.
- Bake at 350°F. for 25 to 35 minutes or until toothpick inserted in center comes out clean. Remove from oven; immediately sprinkle with marshmallows. Return to oven; bake an additional 2 minutes.
- While marshmallows are baking, in large saucepan, combine 1/2 cup butter, milk, 2oz. unsweetened chocolate and reserved 4 oz. cream cheese. Cook over low heat, stirring until well blended. Remove from heat; stir in powdered sugar and 2 teaspoons vanilla until smooth. Immediately pour frosting over golden marshmallows and lightly swirl with knife to marble. Refrigerate 1 hour or until firm. Cut into bars. Store in refrigerator.
