I have a secret LOVE for tacos! I mean, they’re delicious, sometimes crunchy, beautiful fillings… it’s the perfect portable food right!? So imagine smokey and fluffy scrambled eggs and breakfast sausage cooked over an open flame developing those amazing crispy bits, along with sharp cheddar cheese and tender potatoes tucked in a slightly charred tortilla, and then topped with your FAVORITE taco accessories! All I can say is ahhhhhh…!
So when we embarked on another weekend adventure, I knew these easy campfire breakfast tacos would fit perfectly into our camping lifestyle. Made with simple ingredients, this quick meal guarantees to fill your belly and will make the perfect addition to your camping recipes that your whole family will love.
Where Did The Humble, Yet Tasty Taco Come From!?
The word “taco” is quite new. As the story goes, tacos originated from Mexican silver miners in the 18th century. By this time, tacos were the food of the working class filling them with bits and bobbles and becoming the best street food EVER!
Tacos were first introduced to the United States in 1905. Mexican immigrants were migrating to work on the railroad and started bringing this delicious make-ahead food. By 1920, the Mexican food brought in began to fuse with American ingredients and the taco we know and love was born.

Ingredients Needed For These Easy Campfire Breakfast Tacos:
Easy campfire breakfast tacos are made with only 7 basic ingredients and are THE BEST THINGS to eat on your perfect camping trip. This delicious savory breakfast can feed a lot of people or just two! Cocinemos! Let’s cook!
- Breakfast Sausage: our go-to favorite is the maple flavor from Aldi.
- Sharp Cheddar Cheese: for easy camping meal preparation, shred cheese ahead of time & store it in a waterproof portable container. No one likes wet soggy cheese!
- Farm fresh eggs: go-to camping egg carton.
- Flour Tortillas
- Onion
- Potato
- Coconut Oil: has a low smoke point & perfect for campfire cooking.
- Cast Iron Skillet: here is our favorite.
- Additional taco accessories: sour cream, pico de gallo, avocado, cilantro, limes, cowboy candy a.k.a. pickled jalapenos…GO CRAZY!
How to make easy campfire breakfast tacos-your new camping recipe:
With just a few simple steps and minimal prep time, you’ll have an Instagrammable-worthy hot breakfast in no time. So grab your cast iron skillet and a cup of Joe and let’s do this!
First things first. Grab the wood and let’s get the campfire lit.

While the fire is getting all sexy and hot, kick back in your chair with a FANTASTIC cup of coffee brewed fresh with this pour-over system and drink in the early morning. Ahhhhhh…PERFECTION!
Run and grab everything you will need to cook with. We LOVE our Dometic CFX3 95DZ, 95 Liter Dual Zone Portable Refrigerator and Freezer. I pack our groceries without fear of anything spoiling. Nothing dampens your camping experiences like soggy food! No Bueno!
Let the breakfast magic begin!
- Crack your eggs in a large bowl. Whisk until fluffy and happy. Add a pinch of salt, pepper, and garlic. Set the egg mixture to the side.
- Next, chop your potatoes and toss them into the cast iron skillet.
- Slice up your onion and add to the potatoes. Add salt, pepper, and garlic to taste.
- Add your breakfast sausage and you are ready for the fire!
Place the cast iron skillet directly above the hot coals. We want to get a good char going on the breakfast sausage while cooking the potatoes quickly. Keep an eye on your fire and add more wood if needed. Drink more coffee. It’s a BEAUTIFUL morning! AND your camping! You will know it’s good to go when your potatoes are soft. If it’s taking a bit longer and the breakfast sausage is done BEFORE the potatoes, you can offset the skillet and place a cover on it to finish the cooking. If THAT’S the situation, enjoy the campfire with MORE camp coffee!
Remove from the fire and set aside. Place the skillet off of direct heat. Add coconut oil to coat the bottom of the skillet and allow to heat up. Once hot, pour in the eggs and scramble. You are going to want to continuously scrape the bottom of the skillet as the eggs cook to prevent it from sticking.
Now that the eggs are cooked and set aside, grab the tortillas and a pair of tongs. Lay the tortillas over the fire in a single layer for about 30 seconds. Check the bottoms to see if they are getting GORGEOUS grill marks. When they start to bubble, flip, and char on the other side. Place on a plate and it’s time to eat!
Now the fun begins! With a build-your-own taco bar spread out on the picnic table, fill these bad boys to your heart’s content! Our favorites are avocado, salsa, jalapenos, sour cream and a squeeze of fresh lime juice. It makes my mouth SING and my belly HAPPY! BON APPETIT!
Easy Campfire Breakfast Taco Variations:
The sky’s the limit with this campfire breakfast taco. Here are a few we have tried and love.
- Take all the same ingredients and place in a large tortilla. Wrap in heavy duty aluminum foil and place on the campfire grill grates. Soooooo good! It’s smoky, cheesy, melty goodness!
- Swap the breakfast sausage for bacon. Cheddar for monterey. Hash browns for potato. Very tasty.
- Breakfast quesadillas are AMAZING!
- We are fans of “bowls.” A breakfast bowl with all the same ingredients would be GLORIOUS.
- Swap out the flour tortillas for corn.
- Do you enjoy a plant based diet? Swap the eggs for tofu or JUST eggs, your favorite vegan cheese and plant based meat crumbles. Or, add roasted sweet potato, black beans, fajita peppers & onions, topped with Oui coconut yogurt, cilantro, and a squeeze of lime. Ohh my! I have an addiction…I know…

EASY CAMPFIRE BREAKFAST TACOS

Get ready to flip, fold, and feast on the delightful fusion of camping convenience and breakfast bliss with our easy campfire breakfast tacos- your new favorite camping recipe.
Ingredients
- 1/2 16 ozs Pork Breakfast Sausage Roll
- 6 Eggs
- 1 Small Onion
- 1 Medium Potato
- 6 Flour Tortillas
- 8 ozs Sharp Cheddar Cheese, Shredded
- Salt, Pepper, & Garlic Powder
- OPTIONAL TOPPINGS
- Salsa
- 1 Bunch Cilantro
- Sour Cream
- Pickled Jalapenos
- Limes
- Avocado
Instructions
- Get the campfire lit. If using a camp stove or stove at home, heat to medium high heat.
- Grab all your ingredients.
- Grab a large bowl and crack your eggs into it. Whisk eggs until light and fluffy. Season to taste with salt, pepper, and garlic. Set aside.
- Slice your potato and onion thin enough to cook quickly. Toss in cast iron skillet.
- Squeeze your breakfast sausage right on top of the potato and onions. Season with salt, pepper, and garlic.
- Check the campfire and make sure your coals are good and hot. Place the cast iron skillet directly over the heat. With a spatula, move mixture around until cooked through. If sausage cooks faster than the potatoes, place skillet off to the side and cover for a few minutes to finish cooking off the potatoes. You're looking for fork tender potatoes.
- Once cooked through, place on a plate. Now is a good time to check the coals. add more wood if needed. Grab your egg mixture and coconut oil. Add a good amount of the coconut oil to the cast iron, place offset from heat, and allow to heat up.
- When the oil is good and hot, add your eggs and using your spatula, scrape eggs as they begin to cook. Continue this process until you have beautiful scrambled eggs. Remove from heat and move to a plate.
- Next, grab your flour tortillas and a set of tongs. In a single layer, place your tortillas on the grill grates. After about 30 seconds, the tortillas should start to bubble. Flip. Char on the other side for another 30 seconds. Your looking for super sexy grill marks on the tortillas.
- Throw those babies on a plate & it's taco time! Assemble your tacos with all the taco accessories.

*PRO TIP
Your cast iron skillet might get shady after the egg situation. No worries! Pour enough water to cover the bottom of your skillet. Place on the direct heat of the fire. Allow to heat up. Add more water if necessary. As it begins to heat, take your spatula and start to scrape the bottom. All those bits will begin to loosen and release from the cast iron. Remove from the heat, dump, and wash as normal. No soap Friends in the cast iron!
