Oh, did I mention I live in Central Florida and it’s STILL 105 degrees in September!? What’s a girl to do!? While very tasty and gets the Fall vibes going, I wanted to create a personal touch with more pumpkin flavor and a more robust taste. I think we nailed it!

WHAT IS A SCONE!?
Not to be confused with its Southern Sister, the biscuit, it is a traditional British baked good enjoyed by the Dowager and Lady Mary Crawley on Downton Abbey during afternoon tea. Popular in the United Kingdom and Ireland, It is usually made of either wheat flour or oatmeal, with baking powder as a leavening agent, and baked on sheet pans. A scone is often slightly sweetened and occasionally glazed with egg wash.
The true recipe features a round-shaped scone but every shape flies today! The British scone is typically lightly sweetened with raisins and currants but can also be savory with sourdough and cheeses. Today’s flavors feature blueberry scones, orange scones, and our beloved pumpkin chocolate chip scones! I bet a bacon, cheddar, and chive scone would be FANTASTIC!

- Brown Sugar- We love the molasses flavor and the chewy texture of brown sugar.
- Baking Powder & Baking Soda
- Unsalted Butter- Butter is an essential ingredient in scones, providing that flaky texture and wonderful flavor we’re after. It should be unsalted, very well chilled, and cut into small cubes, or grated butter.
- Pumpkin Puree– canned or homemade
- Heavy Cream- The best-tasting baked goods are made with a thick liquid, like heavy cream. (See Substitutions below.)
- Large Egg – Adds moisture, and richness, and helps bind the dough.
- Vanilla Extract – That extra added depth of flavor.
- White Chocolate Chips- You can use the chips or cut a bar for rustic chunks.
- Salt- Enhances the other flavors.

- Confectioners’ Sugar- Makes the glaze smooth, sweet, & decadent!
- Heavy Cream – Add extra as needed to reach the appropriate consistency.
- Maple Syrup – Perfect for more layered flavor and Fall vibes.

HOW TO MAKE PUMPKIN WHITE CHOCOLATE SCONES WITH BOURBON MAPLE GLAZE.
With just a few simple steps, minimal prep, and no chill time, you’ll have an Instagrammable-worthy Fall treat in no time. So grab your cookie sheet and a cup of Joe and let’s do this!
First things first. Preheat the oven to 400 degrees F. Run and grab all your ingredients. Throw on some GREAT tunes and let’s get this party started! I mean, it’s Pumpkin White Chocolate Scones!
Make the scone dough. Mix the wet ingredients and set aside. Whisk the flour, sugar, spices, baking powder, baking soda, and salt in a bowl. Cut the butter into the flour mixture until there are pea-size pieces. Add the pumpkin mixture. Stir until combined.
Knead the dough and shape the scones. Knead the dough a few times on a dusted counter until it’s formed together. Shape into a rectangle about 1.5 inches thick and cut into 8 wedges. Transfer them to a baking sheet with parchment paper, leaving spaces in between. If your dough feels warm, place in the fridge for approximately 5 minutes to chill the butter & keep your scones from becoming pancakes when they bake.
Bake. Bake until golden brown. I like to bake for 7 minutes and then check. No one likes a well-done scone. Cool on the pan for 5 minutes then transfer to a cooling rack to cool completely. Throw in the fridge for a quicker chill time. I’m impatient. It’s Pumpkin White Chocolate Scones with bourbon Maple Glaze…and it’s Fall!
Make the white glaze. Combine the powdered sugar, Bourbon, maple syrup, and heavy cream until smooth. Spoon the glaze over the entire surface of the scones and allow to set for 5 minutes in the refrigerator. This gives it a hard set.
Make the spiced glaze. Whisk together the powdered sugar and spices. Add the heavy cream, mixing until lump-free. Transfer to a ziplock bag and cut a small tip off the corner. Drizzle glaze over the scones. Allow to set for 15 minutes or so.
VARIATIONS & SUBSTITUTIONS FOR THESE DELICIOUS PUMPKIN WHITE CHOCOLATE SCONES.
- Milk and half-and-half can be used in place of the heavy cream.
- Homemade pumpkin puree is delicious in this.
- Omit the Bourbon and replace with either extra maple syrup, strong brewed coffee, or simply leave out all together. Still AMAZING!
- The white chocolate chips can be left out or replaced with cinnamon chips, mini chocolate chips, or no chips!
- Swap out the individual spices and use Pumpkin Pie Spice instead. Start with 2 teaspoons.
TIPS FOR A SUCCESSFUL BATCH OF SCONES.
Scones are so much fun to make but can be a little intimidating your first go around. Here are a few tips and tricks to ensure a FABULOUS batch of perfect scones.
- Add more heavy cream if needed. The white glaze should be thick but still pourable. If it’s too thick, add a small amount of heavy cream until it’s the right consistency.
- Make sure the glaze sets completely before adding the next. If you add the spiced glaze on top of the white glaze immediately, the two will mix together. It won’t affect the flavor but it won’t look as pretty.
- Be sure to use cold butter. When making scones, it’s essential that the butter is cold. Not room temperature or soft but fresh out of the fridge. Throw in the freezer for 5 minutes to firm it back up. Otherwise, your scones will flatten when baking. Pancake scones anyone!?
- Don’t over-mix the dough. Be sure to not overmix or over-knead the dough. You want to mix until the ingredients are just combined. Think along the lines of making a flaky biscuit.
- These make GREAT camping snacks! Freeze the dough. Thaw at camp, bake in your Coleman Camp Oven at 350 degrees F. Glaze or eat plain!

How to store leftovers. Did you HAVE leftovers!? These pumpkin scones are best enjoyed fresh but you can store them in an airtight container at room temperature for up to 2 days.
Can I freeze these? You can freeze unglazed scones for up to 3 months. Thaw in the fridge and add the glaze.

PUMPKIN WHITE CHOCOLATE SCONES WITH A SPICED BOURBON MAPLE GLAZE

Ingredients
- 2 cups all-purpose flour
- ⅓ cup brown sugar, packed
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ¾ teaspoon ground cloves
- ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup 1 stick unsalted butter, cut into cubes
- ½ cup pumpkin puree
- 3 tablespoons heavy cream
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup white chocolate chips
- FOR THE GLAZE
- 1 cup confectioners' sugar
- 2 tablespoons heavy cream
- 1 tablespoon maple syrup
- 1 tablespoon Bourbon
- FOR THE SPICED GLAZE
- 1 cup confectioners' sugar
- ¼ teaspoon cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- Pinch of nutmeg
- 2 tablespoons heavy cream
Instructions
1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
2. In a large bowl, combine flour, sugar, cinnamon, baking powder, cloves, ginger, nutmeg, baking soda and salt. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
3. In a large glass measuring cup or another bowl, whisk together pumpkin puree, heavy cream, egg and vanilla. Pour mixture over dry ingredients and stir using a rubber spatula until a soft dough forms.
4. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pill, roll the dough into a 10- by 7-inch rectangle, about 1.5 inches thick. Using a large knife or a pizza cutter, cut the rectangle in half lengthwise, then cut into 2 even pieces crosswise, making four rectangles. Then cut each each rectangle into two triangles, making 7-10 triangles.
5. Place scones onto prepared baking sheet. Place into oven and bake for 7 minutes,. Check the scones. You are looking for just set. Add an additional 2-3 minutes baking if still raw.
6. To make the glaze, combine confectioners’ sugar, heavy cream, maple syrup, and bourbon.. Whisk until smooth. If the glaze is too thick, add more heavy cream as needed; set aside. To make the spiced glaze, combine confectioners’ sugar, cinnamon, cloves, ginger, nutmeg and milk. Whisk until smooth; set aside.
7. When the scones are done, cool for 10 minutes and spoon the glaze on each scone before drizzling with spiced glaze. Place in the refrigerator for 5 minutes to set the first glaze. Once the first glaze has set, add the spiced glaze to a sandwich bag, cut the tip off, and glaze top of scones in a side-by-side drizzle.
8. Allow glazes to set before serving.
