I have an ongoing “love affair” with toast. ANY kind of bread will do honestly, but I prefer a FANTASTIC homemade artisan loaf. I’m a snob. I know. Breakfast, lunch, or dinner I could eat toast! I should feel ashamed…but I don’t and here is why. When you create a fantastic artisan loaf of bread that is KING of all the bread recipes, while very tasty on its own, once toasted, makes this incredible marriage of flavors and offers a great texture. Slathered in sweet cream butter and drizzled in Florida Orange Blossom Honey…{sigh}…see what I mean!?
A Recipe For Toast!?
So it makes PERFECT sense to combine my two loves- camping and toast. This cranberry walnut artisan bread is super easy to make and the best part is, it can be stored in an airtight bag or an airtight container for a couple of days. Perfect to bake ahead for your outdoor camping adventure or bake it in a Dutch oven right on the fire! (Can’t wait to try this option on our next camping trip!) More toasty goodness here.
Toasting is a breeze as well. Grab a folding camp stove toaster or a cast iron skillet and you are good to go. Paired with some fresh fruit and if you are feeling a bit fancy, lightly scramble some eggs and add a side of hash browns and you have another favorite way we enjoy this amazing camp toast! What Ingredients Do I Need For Cranberry Walnut Artisan Bread
​This life-changing cranberry walnut bread is not only the perfect artisan bread for toasting BUT only requires 9 ingredients most of which are most likely hanging out in your pantry.
all-purpose flour
dried cranberries
active dry yeast
water
honey
olive oil
salt
cinnamon
walnuts
Here We Go…

This cranberry walnut artisan bread is so simple to make and starts with warm water and active yeast and a few more pantry staples. Gather your wet ingredients, the bowl of your stand mixer, dry ingredients, a large bowl, measuring cups, measuring spoons, and let’s get to it!
Place your warm water in the bowl of your stand mixer, add sprinkle the yeast on top. Next, add half a cup of the flour a gently mix. Let the mixture sit for ten minutes to proof the yeast.
Add the honey, salt, olive oil and cinnamon and mix briefly on low with the paddle attachment to combine. Slowly add the remaining flour one cup at a time and mix on medium low.
Once the dough forms a shaggy mass, add the dough hook.
Need on low speed until dough is glossy and smooth. This could take 3-5 minutes or longer. Stop and test the dough every couple of minutes until it passes the window pane test.
Shape dough into a ball and place in a lightly oiled bowl. Place a damp tea towel or plastic wrap on top and allow to rise until doubled.
Gently deflate the dough and transfer to a lightly floured surface. Slightly flatten and add the cranberries and chopped walnuts to the top of dough. This takes a hot minute!
Knead in the cranberries and the chopped walnuts until completely incorporated.
Once fully incorporated, shape back into a ball and place on a lightly floured parchment paper. Cover loosely with a damp towel and allow to double again. Are you getting excited!? Preheat your oven to 350 degrees F.
Once the cranberry walnut artisan bread dough has finished its second rise, dust the top with flour…
…and score…
Place on either a cookie sheet or in a Dutch oven for about 35-45 minutes depending on method and oven. Bake until golden brown and hollow when tapped on.
Golden deliciousness! AHHH….the smell of baked bread! Now…for the BEST part! Drum roll please….CAMP TOAST! Slice your AMAZING bread into thick slabs…

Tips For Making Cranberry Walnut Bread & Ultimate Camp Toast
- This bread is pretty basic. However…I have added too much flour and it makes the bread tough.
- I like to slightly underbake this artisan bread. It makes better toast.
- This bread can be slightly OVER proofed and still bake beautifully.
- When using a camp toaster, flip the bread a time or two for the best even toasting and keep heat at around medium on your propane gas camp stove.
- No camp toaster!? No problem! You can toast directly on the grill grate on the campfire, in a cast iron skillet, or in your oven at home.
- This beautiful bread DOES NOT FREEZE WELL. It’s a hot crumbly mess!
Variations Of How To Use Cranberry Walnut Artisan Bread Other Than Toast
- We love to make a FANCY sandwich. Take two pieces of bread, slather with a good dijon mustard, bib lettuce, sliced granny smith apples, peppered turkey, and white cheddar.
- Leftover stale bread makes the perfect french toast.
- We also LOVE to make big salads! Cut this bread into cubes, toss in melted butter, bake, and make the best croutons EVER!
- Change out the nuts and dried fruit! Blueberry and Pecan would be nice or dried peach and macadamia nuts would be fantastic!
- Use your best no knead sourdough recipe and add the cranberries and walnuts.

CRANBERRY WALNUT ARTISAN BREAD

Loaded with dried cranberries, luscious walnuts, a hint of cinnamon, and toasted to a perfect golden brown, THIS bread is sure to make your taste buds sing! So grab that hot steamy cup of coffee or a delightful cup of tea because cranberry walnut artisan bread is the ultimate camp toast!
Ingredients
- 1 1/2 CUPS WARM WATER
- 1 TABLESPOON ACTIVE DRY YEAST
- 6 CUPS ALL PURPOSE FLOUR
- 1/2 CUP HONEY
- 1/4 CUP OLIVE OIL
- 1 1/2 TEASPOON SALT
- 1 TEASPOON GROUND CINNAMON
- SCANT 1 CUP DRIED CRANBERRIES
- SCANT 1 CUP RAW CHOPPED WALNUTS
Instructions
- To the bowl of a stand mixer fitted with a paddle attachment, add the warm water and sprinkle in the yeast. Add in 1/2 cup flour and mix briefly on low speed to combine. Let the mixture sit for 10 minutes to proof the yeast.
- Add in the honey, olive oil, salt, and cinnamon and mix briefly again on low to combine. With the mixer on low speed, slowly add in the remaining 5 1/2 cups of the flour about 1 cup at a time. Once the dough forms a shaggy mass, stop the mixer and switch out to a dough hook. Knead on low speed for about 3-5 minutes until the dough is smooth and elastic. If the dough is too sticky, slowly add in more flour 1 tablespoon at a time.
- Shape the dough into a ball and place in a large lightly oiled bowl. Turn once to coat, then lightly cover with a damp tea towel or plastic wrap. Allow the dough to rise until it has doubled in size, about 1 1/2 - 2 hours.
- Line a large baking sheet with parchment paper, then lightly sprinkle with flour. Set aside.
- Gently deflate the dough and transfer to a lightly floured surface. Knead in the cranberries and the chopped walnuts by hand. Split the dough into 2 equal sized pieces and form into a ball. Place both on the parchment lined baking sheet and cover with a damp tea towel and allow to rise again for another 45 minutes until puffy.
- Meanwhile, preheat oven to 350 degrees F. Once the loaves have proofed, sprinkle the tops with flour and score.
- Bake for about 35-45 minutes until golden brown and the loaves sound hollow when tapped on. Transfer to a wire rack and contain yourself from diving right in.
- Once cool, cut into slices and prepare the most amazing toast of your life or use any other way your heart desires!
Notes
No stand mixer!? No worries! This process can also be done by hand!
