- 1 1/2 CUPS WARM WATER
- 1 TABLESPOON ACTIVE DRY YEAST
- 6 CUPS BREAD FLOUR
- 1/2 CUP HONEY
- 1/4 CUP OLIVE OIL
- 1 1/2 TEASPOON SALT
- 1 TEASPOON GROUND CINNAMON
- SCANT 1 CUP DRIED CRANBERRIES
- SCANT 1 CUP RAW CHOPPED WALNUTS
Instructions
- To the bowl of a stand mixer fitted with a paddle attachment, add the warm water and sprinkle in the yeast. Add in 1/2 cup flour and mix briefly on low speed to combine. Let the mixture sit for 10 minutes to proof the yeast.
- Add in the honey, olive oil, salt, and cinnamon and mix briefly again on low to combine. With the mixer on low speed, slowly add in the remaining 5 1/2 cups of the flour, about 1 cup at a time. Once the dough forms a shaggy mass, stop the mixer and switch out to a dough hook. Knead on low speed for about 3-5 minutes until the dough is smooth and elastic. If the dough is too sticky, slowly add in more flour, 1 tablespoon at a time.
- Shape the dough into a ball and place it in a large, lightly oiled bowl. Turn once to coat, then lightly cover with a damp tea towel or plastic wrap. Allow the dough to rise until it has doubled in size, about 1 1/2 - 2 hours.
- Line a large baking sheet with parchment paper, then lightly sprinkle with flour. Set aside.
- Gently deflate the dough and transfer to a lightly floured surface. Knead in the cranberries and the chopped walnuts by hand. Split the dough into 2 equal-sized pieces and form into a ball. Place both on the parchment-lined baking sheet and cover with a damp tea towel and allow to rise again for another 45 minutes until puffy.
- Meanwhile, preheat the oven to 350 degrees F. Once the loaves have proofed, sprinkle the tops with flour and score.
- Bake for about 35-45 minutes until golden brown and the loaves sound hollow when tapped on. Transfer to a wire rack and restrain yourself from diving right in.

What a great idea to make a yeast bread with cranberries and walnuts.
